The Food Standards module is a ten-credit module accredited by the Environmental Health Registration Board which may be taken by holders of the Higher Certificate in Food Premises Inspection. Successful completion of the module provides evidence that the candidate is suitably qualified to carry out official controls in food standards as indicated in sections 1.2.9.2.1 and 1.2.9.2.2 of the Food Law Code of Practice.
The module will cover:
- Legislation relating to composition and labelling, chemical safety, marketing standards, allergens and additives legislation;
- Food adulteration and authenticity, the role of the Public Analyst and the limits of common techniques used;
- Food composition including the legal composition of foods such as chocolate, meat products, dairy products etc.
The course will be held over six days arranged in two blocks of three consecutive days. Lectures will take place at the University of Birmingham, Edgbaston Campus. Candidates must attend both lecture blocks. The module assessment will take the form of a case study through which candidates can demonstrate their competency in food standards.
